For those of you unable to eat egg, here's a step-by-step tutorial (including video below) on how to prepare your Organic'ly pancake and waffle mix egg-free!
On the back of your Organic'ly mix, you'll see the "things you'll need with 1 package of mix", which include:
- 2 large whole eggs
- 1 + 1/2 cup liquid of your choice (almond milk, coconut milk, dairy or water)
To prepare egg-free, you're going to substitute the eggs with flax egg and baking powder. Before you get started make sure you have the following substitutions:
- 3 tablespoons of ground flaxseed meal
- 1 + 1/2 teaspoons of baking powder (not baking soda)
Step-by-step instructions:
STEP 1: Add 3 tablespoons of flaxseed meal and 1/2 cup water to a dish and stir. Let sit for 5 minutes to thicken.
STEP 2: While flaxseed egg is thickening, add the following to a blender (do not blend yet):
- 1 + 1/2 cup liquid of your choice (almond milk, coconut milk, dairy or water)
- 1 package of baking mix
- 1 + 1/2 teaspoons of baking powder
STEP 3: Add thickened flaxseed egg to ingredients already in blender and blend.
STEP 4: If batter is too thick (which it may be), add 2 tablespoons of liquid at a time to adjust the batter consistency to your preference.
PRO TIP: When preparing egg-free, cook on light/medium heat and allow for enough time for pancakes/waffles to cook through. Allow to cool for a few minutes before serving.
